Waffles! But candida free, gluten, lactose and sugar free

You'll be amazed by the taste of these healthy waffles! I got inspired by a recipe I took from the candida free diet I've been following for the past year and a half. The author of this diet, the food therapist Cécile Ellert, doesn't forget to give us in her book "Anti-candida Balance", some tasty, sweet-like recipes to handle the sweet cravings.
These waffles are from her book. I adapted the original recipe because I found those from the book too dry for my taste.

For those of you who have to follow a strict no gluten, no lactose, no sugar diet, I hope you'll enjoy this sweet breakfast (or afternoon snack).




Ingredients: Makes 4 big waffles or 6 small ones

150g of rice flour
50g of corn starch
A pinch of baking soda
1 Tbsp of Xylitol (I find it in organic shops, in Belgium mainly in Sequoia or TAN) + 1 Tbsp of Xylitol
1 tsp of cinnamon
1 egg yolk
3 egg whites, stiffly beaten
50g of clarified butter* melted or ghee
50ml of coconut milk


Preparation:

In a big bowl, mix the rice flour, the corn starch, baking soda, 1 Tbsp of xylitol and cinnamon. Add the egg yolk, the melted butter and the coconut milk. 
Start heating your waffle iron and beat the egg whites stiffly. Add the egg whites to the dough right before using it. Add the second table spoon of xylitol so they turn golden when cooked, like a real "gaufre de Liège"!
Bake your waffles as you usually do and eat them while they are still warm, they're much better! (But be careful not to burn yourself, let them cool for 5mn first...)

You can top them with shredded coconut or a nut spread (hazelnut, cashew nut or almond).

* (to prepare clarified butter: heat some organic butter until you see a separation between liquid and solid. Remove the solid part and keep only the liquid. The liquid will solidify when cold)
